Building Xamarin IOS App from command line, is there a way to specific Xcode path in the terminal?

I'm working on setting up a CI build process for one of our Xamarin IOS applications. The app is being built using mdtool from the terminal. I'm wondering if there is a way to specify the Xcode path to be used for the build at run time, rather than have it use the one that is set in Xamarin's preferences?

Our build machine has several different versions of Xcode on it, and therefore we don't use the default path. Ideally there would be a way we could have each of our builds set their appropriate Xcode version to build with, rather than having to go in and change that preference each time? Is this possible with mdtool or any other ideas?
