Can't build iOS anymore - MDocArchiveToMsxDocConverter.exe and apple-doc-wizard not found

Yes, we event tried reinstalling Xamarin completely on the Mac.

When successfully pairing and connecting to the Build Host in Visual Studio, clicking on "Refresh build server info" or "Start" just causes two painful errors to appear in the mac server log:

Handling with command: [Info: CommmandUrl=Info] (17)
Attempting to acquire command execution lock, timeout set to 00:10:00
mtouch 8.0.0.63 (58b46df)
Command [Info: CommmandUrl=Info] finished (17)
Request handled in 9,106ms
Handling with command: [StatusSdk: CommmandUrl=StatusSdk] (17)
Attempting to acquire command execution lock, timeout set to 00:10:00
Error: /Developer/MonoTouch/usr/share/doc/MonoTouch/MDocArchiveToMsxDocConverter.exe not found
Error: /Developer/MonoTouch/usr/share/doc/MonoTouch/apple-doc-wizard not found
Command [StatusSdk: CommmandUrl=StatusSdk] finished (17)

Additionally, when pressing "Start" in Visual Studio just pops up this message box, and that was it:

The debugger cannot continue running the process. Unable to start debugging. - OK

And here comes the best thing: Yesterday, everything worked fine (beyond the typical known building bugs atm like a disconnecting Build Host etc.). Started the computers today (without any updates installed), nothing works anymore.

Help, obviously, please ;-)
